400 g de lentejas –> 400 g of lentils

1 chorizo

2 zanahorias grande –> 2 big carrots

2 dientes de ajo –> 2 cloves of garlic

1 cebolla mediana –> 1 medium onion

2 tomates grandes –> 2 big tomatoes

1 hoja de laurel –> 1 bay leave

1 cucharada de pimentón –> 1 spoon of paprika

agua –> water

aceite de oliva virgen extra –> extra virgin olive oil

sal –> salt

Put lentils in a colander and wash them.

Cut the chorizo into rounds, put in a hot pan and sear each side. Once the fat has rendered, put the chorizo aside for later.

Finely chop up onion and garlic, put them in the pan with the chorizo grease with some extra virgin olive oil and brown them at low heat.

Cut the carrots and the tomatoes in dices and add to the pan together with the bay leave.

Cook for 5 minutes, then sprinkle a spoon of paprika.

Then add the lentils and a cup of water and let cook for around 20 minutes.

Serve hot and top the soup with the seared chorizo.
