Have you ever heard about tortilla?

I guess you have, but what you have to know is that “tortilla” has two different meanings, and the one you know is probably the South American one, which is the pancake where wrapped with different kind of meat, salad, tomatoes and whatever you prefer to add.

Well, what you should know, is that in Spain, tortilla de patatas is a national dish, and every proper and honoured Spanish is able to cook it: but it is not a pancake, it is a sort of potatoes omelette!

So, here’s the recipe, so that you can try to cook it and tell us which tortilla you prefer!

Let’s start then. What you will need is the following:

  • 10 medium sized potatoes
  • Half onion
  • 4 eggs
  • Rock salt
  • Extra virgin olive oil

After you have peeled and washed all the potatoes, cut them in thin slices, not too big, and add the salt at your own taste. Then do the same with the onion, but cutting it even smaller.

Put a frying pan to warm with oil, and when it’s hot enough fry potatoes and onion together.

It is recommendable to fry it at a high temperature the first few minutes, and to reduce it later.

Don’t forget to stir the potatoes once in a while with the help of a skimmer, that’s important not to make them stick or burn one side more than the other.

In 10 or 15 minutes the potatoes will be ready, they don’t need to be too much brown but soft in order to make a well-done tortilla!

Once the potatoes and the onion are fried, take them out of the pan straining them from the oil, and put them in a big bowl.

You have now to whisk the eggs in a plate; you might add salt and/or a stream of milk if you want it to taste better. Pour the beaten eggs over the potatoes and mix them.

Now it’s time to make the tortilla in the frying pan, and you have to use a quite big one.

Put some oil drops in the bottom and pour the mix of potatoes and eggs in it, at first let the compose cook at a medium temperature, then reduce it (as you did before with the potatoes), so that it doesn’t burn and it can cook well inside.

Once one side of the tortilla is cooked, you have to turn it over, paying a lot of attention, with the help of a flat plate.

Let cook the other side as well, and after that… There’s the Spanish tortilla ready to eat!
